
Storing potatoes through the winter can be really frustrating for anyone who does not have a traditional, underground root cellar. I tried storing them in the coldest room in the house and I made sure to wrap them well inside of the cardboard boxes that allowed no light to get in. Unfortunately, the potatoes were already starting to sprout by December and I had to use them all up or watch as they slowly wrinkled and decayed.
The Chest Freezer Method
After much trial and error, I finally found a solution that works beautifully! Now, I use a converted chest freezer in the basement to store my potatoes from harvest all the way until spring. To keep the temperature constant, I use an Inkbird thermostat controller, which maintains a steady 40 degrees F inside of the freezer. It is an incredible relief to know that the potatoes that I harvested in August or September will still be good to eat in April of next year.
