These two sets of tubers were harvested from a Tom Wagner TPS variety called Pig Knuckles. Both plants produced fingerling shaped tubers which had red skin and some color in the flesh. The golden-pink fleshed tubers had a slightly higher yield, and I will be keeping some of these to grow again next year. Potatoes with more intense colors in their flesh are said to contain higher levels of nutrients. I think that intense flesh colors are just prettier and more fun to cook with than the white or pale-yellow flesh of most common store-bought potatoes. In my experience, flesh color does not affect the flavor very much. A white potato tastes about the same as one with red or blue flesh. In any case, all of the potatoes from the garden taste better than store bought tubers.

Great to see the pictures, I grew pig knuckles as well, Have you cooked either of these up? Thoughts?
I did not cook any of these individually. I’m saving the best tubers to grow next spring. They have just begun to sprout in storage. Hopefully they will last a few more months. How did your pig knuckle plants do?
